Nykita's Peach Cobbler Recipe (from A Pint of Peaches and Poison)


I am absolutely delighted to share this recipe for Peach Cobbler with y'all today!! I have spent years developing it as a treat for our family---a treat that is delicious to family members who can and cannot eat sugar. I hope you enjoy it as much as we do! Nykita's sugar issues were inspired by my own daughter's insulin resistance. If you haven't had a chance to read A Pint of Peaches and Poison yet, I hope you'll give it a try! It is, first and foremost, meant to be a fun and exciting no-spice romantasy novella! But it is also a gentle nod to the many people around us who silently avoid sugar because of insulin resistance, diabetes, and other sugar complications.

Nykita's Peach Cobbler Recipe

(from a Pint of Peaches and Poison)

Peach Filling:

* 9-10 cups chopped fresh peaches or frozen peach slices

* ⅓ cup sucralose sweetener (measures cup for cup like sugar)*

* 1 Tablespoon cornstarch 

* ½ teaspoon ground nutmeg

* 2 Tablespoons fresh lemon juice 

* ¼ teaspoon ground ginger

* 2 teaspoons vanilla extract 

* ¼ teaspoon salt

* 2 teaspoons ground cinnamon


1- Lightly grease a glass 9” x 13” pan and dump the peaches in it.

2- Sprinkle the rest of the peach filling ingredients

on top of the peaches and stir them all up. 

3- Cook at 350 degrees for 10 minutes. While it cooks, mix up the topping.


Topping: 

* 1 ¼  cups sucralose sweetener (measures cup for cup like sugar)*

* 1 Tablespoon fresh lemon juice 

* 1 ¼ cups quick oats

* ¼ cup rolled oats

* ½ cup salted butter, softened

* (if your butter is unsalted) ¼ teaspoon salt 

* 2 teaspoons cinnamon


1- Mix everything except the butter and lemon in a small mixing bowl.

2- Add the butter and lemon, and stir with a fork until the

mixture is crumbly.


3- Sprinkle it over the Peach Filling.

4- Cook at 350 degrees for 30 minutes or

until the topping is a golden brown.


Enjoy warm, plain or with sweetened cream!


* Note: Granulated sugar, brown sugar, or honey can be substituted for the sweetener if you prefer to use sugar.
